It seems like I did Whole30 a lifetime ago. I completed my one and only full Whole30 in January 2019. It was tough but eye opening. For those unfamiliar with the Whole30. In short, it is a 30-day diet that emphasizes whole foods and the elimination of sugar, alcohol, grains, legumes, soy, and dairy. You can read more about my experience and results HERE. A staple in my Whole30 journey were these little bananas muffins. I know Whole30 says to not make any treats or baked goods but these were necessary for me completing Whole30. I have had so many friends over the years ask me what the recipe for these muffins are and I always have to dig around my Instagram to find the exact post. Happy to finally have a fresh new blog to document this recipe! It is SO easy and tasty even if you aren’t on the Whole30 diet.
Whole30 Approved Banana Muffins
Notes: Makes about 12 muffins. I notice these go bad very quickly. I would recommend eating within 3-4 or so days. Otherwise, freeze them and pull them out when you want one.
Recipe Ingredients:
2 Ripe Bananas
1 Cup of Almond Butter
2 Eggs
1 tbsp Vanilla Extract
1 tbsp Baking Soda
Pinch of salt
Recipe Instructions:
- Add all of your ingredients into a bowl and mix until combined. I prefer to use my Ninja to combine all of the ingredients together. I find it helps to combine the almond butter throughout the other ingredients and give you a nice pourable texture.
- Bake at 350 for about 15 minutes.
